[Seeking mentor for opening a speciality grocery store]

Hi there! I am opening a small, Asian grocery store in my hometown. I am Korean American and am thrilled to be opening this store for our community. I am looking for a a mentor or someone who may have experience opening a speciality grocery store/convenience store. I really want to get the most accurate financial projections for my business plan to be successful. Any help/guidance would be incredibly appreciated.
